Yummy and Easy!

So I have the most delicious (and healthy AND easy!) recipe to share... I got it out of the most recent Cooking Light and it lived up to what I thought it might be!

Tilapia Tostadas with Corn Relish

Ingredients:
8 corn tortillas
1/2 C low fat sour cream
1/4 C green salsa
1 C corn
1/4 C finely chopped red bell pepper
1/4 C finely chopped red onion
1/4 tsp pepper
1/3 C yellow cornmeal
1/2 bag of broccoli coleslaw (or anything else crunchy- lettuce would work!)
1 1/2 tsp minced jalapeno
3/4 tsp salt
1 C peeled diced avocado
2 tsp lime juice
1 1/2 lbs tilapia cut into 1x1 inch pieces
1 Tbsp canola oil

Directions:
Combine sour cream and salsa and set aside. Heat skillet and coat with cooking spray. Add corn, bell pepper, onion, and jalapeno and saute about minutes stirring occasionally. While cooking, combine avocado and lime juice in a bowl and set aside. Remove corn mixture from heat and combine with avocado mixture. Toss. Sprinkle fish with salt and pepper. Dredge fish in cornmeal. Heat canola oil in pan. Add fish and cook about 3 minutes on each side (med-high heat). Flip and continue cooking. While fish is frying, coat each side of tortillas with cooking oil. Broil each side about 2 minutes until crisp. Remove fish from pan and drain on paper towels.

Arrange tostada, coleslaw, fish pieces, corn relish and top off with salsa mix. Enjoy!
