Favorite Story of the Week

So being a teacher definitely has some major perks- gifts, hugs from sweet kids, enjoyment of watching a child learn and discover. But the best perk BY FAR is the stories that you get at school! My favorite one from the week happened today...

Coming in from recess one of my sweet babies comes up holding his crotch area and says, "Mrs. Squillante, I NEED to go to the nurse." Thinking he had an accident I say, "Ok baby. What's wrong?" To which he replies, "My nu*s hurt." That's it. hahahah So I got him a clinic pass and circled OTHER on and wrote "ASK HIM." After seeing the nurse later, I asked what he told her and she said, "Well, he said his nu*s hurt, so I sent him home."

And that my friends is one of the reasons I LOOOOVE being a teacher! Happy Friday!  :)

I just had to share what I got on my first day of school! My sweet husband brought home a beautiful bouquet of roses and lillies- two of my faveorites! It was so thoughtful of him to make my first day even better! The picture doesn't even do them justice- they are gorgeous!
Not only was that a wonderful surprise, but our incredible PTA sent home a catered meal with each teacher for the first day! They knew we would all be too exhausted to cook, so they did it for us! What an incredible idea!
Add to that some sweet first day gifts from my students, and the day was just a blessing all around!   :)

First Day Fun!

Well, I successfully survived my first day of RCE! But boy, I am exhausted!!!!

I LOVE my little ones this year. Such a different set of kids than last year, but they are wonderful all the same. After being away from kids for such a long period over the summer, today was the best reminder of how much I LOVE being hugged by children! I am not sure if there are many things better in life than a hug and an "I love you Mrs. Squillante" from a child. Melts my heart every time.

I am so excited to see what this year brings for our class. I seriously have some of the most amazing parents of kids in my class. They are the sweetest people and are bending over backwards to help me out! I love them!

God has definitely blessed me with this incredible job- thanks be to Him for this wonderful day!

My little sister Michelle was just presented with a WONDERFUL honor- she is listed in a competition of the best high school volleyball players in Texas. It's called "UIL Volleyball Team of the Century" and she is nominated! What an honor! But it doesn't stop there- we need to vote for her!

Go this website and vote for Michelle Moriarty. Tell your friends! It's fun to look through the names (well, fun if you were a high school volleyball fan ever!). They also have a high school football century team, and that's super fun to look through also!

All Grown Up!

Alright, this post just goes to show everyone that we are officially "GROWN UPS"...

We received the wonderful honor of Yard of the Month for our neighborhood! hahahaha How awesome is that?!

When we bought our house a year and a half ago (time flies!!!), the inside had been gutted and redone and it was BEAUTIFUL! The outside, however, was extremely lacking! So, we have been hard at work ripping out old plants and planting new ones (some MANY times!), put in a sprinkler system, laid sod (several times!), and fertilized and watered the heck out of our yard. The grass and trees have been Anthony's projects, and the flower beds have been mine. Well, our hard work definitely paid off because of our new honor! Yay!!

When we saw the sign in our yard it did make me laugh REALLY hard because all I could think of was how old it made me feel... I mean, these are things our parents really like to get- not some young 27 year olds! Alas, it was actually a nice feeling and we are proudly displaying our sign! And Tex even posed for a pic with it!!

I am including some BEFORE and AFTER pics... There are two before pics... You can see the UGLY plants they had used and the mass chaos of them... You can also see the bare grass (seriously, it was so thin and spotty!) and the craziness of the trees (had they ever been trimmed?!)... In the after (the one with Tex posing!) you can see the difference (you can see how the light from the sun is even now!)! Yay!

It's Been a While!

I know it's been a while since the last entry... I guess that's what happens when you have a JOB. I went back to work on THURSDAY last week! I can't believe it's already that time!

I have been so excited to get to know all of the people at my new school. The morale of the campus is so high- why wouldn't it be? It's an AMAZING school! I am so blessed to be at such an incredible campus. My team is awesome and we are planning away! NEGATIVE- we aren't actually at the school yet! Rummel Creek had major renovations going on this summer and of course, the school isn't ready yet. I'm in a TEENY bit of a panic mode- I haven't even seen my new classroom and setting it up in a couple days this week SCARES me! I know that it will all be ok and at least we're all in the same boat!

After a couple days of work I was glad to see Friday afternoon! Before Anthony and I grabbed dinner we had some surprise visitors! The Robertsons came over and we got to watch Jack walking around everywhere! He also met Ella for the first time and she LOVED him!!!! She just followed him around everywhere! Tex was also trying to get in on the action- poor Jack was bombarded with animals! I will post pics later... :)

Saturday we got to have dinner with some old college friends! Lauren Waterfield, Melissa Ruffino, Courtney Cargill, Courtney Robertson, Jake Waldrop, Anthony and me all met up at Escalante's for dinner! All of us lived in a cul-de-sac our senior year of college together. It was so fun to reunite and tell old college stories! We laughed so loud we definitely had some onlookers at the restaurant!

Sunday was a typical day for us- church, lunch/hanging out with my family, and then walking Tex up to the dog park nearby. However, a little kink was thrown into our fun Sunday! I was helping my dad put some shelves together for the playroom at my parents' house. As we finished, Dad and Anthony moved the HUGE bookcase into the playroom. As they were moving it, Dad started yelling because he RIPPED HIS TOENAIL off!!!!! Oh my gosh, it was AWFUL! I took a picture but WILL NOT post it- it's DISGUSTING! Anthony drove him up to the corner clinic where he got three stitches under the toenail, and then another stitch to reattach the nail to the nail bed. YUCK!

That sums up our weekend. I PROMISE I will try to be a better blogger now that I'm working again... I still have LOTS to catch you up on! :)

California.... Knows How to Party...

Anthony and I just got back from an incredible extended weekend in Cali! We went to visit Michelle and watch her play in the Hermosa Beach AVP Tournament. We had such an amazing time!

We got in late Wednesday night and the whole gang (Michelle, Mom, and Dad) all came to pick us up at the airport. Not gonna lie, I was chilly! What a change from the 104 degree heat we left behind. I was a little hungry (and we all know that I get grouchy with no food) so we stopped at Pinkberry to get a snack! Yum! We headed back to Michelle's and visited and fell asleep so we could all be ready for her games on Thursday.

Thursday morning we headed down to the beach. We plopped on Michelle's court, lathered up on sunscreen, and started watching some volleyball. Michelle did great that morning and they won! Yay! After about an hour or so we watched her second match which was still great, but they lost. Bummer. So they were out. Dang. BUT, we did have a good time watching other games and chit chatting with some fun old friends. The beach was amazing. The sand is SUPER deep and there is always a cool breeze blowing in. You don't even realize that you are getting any sun, but you are! Thank goodness us whities (mainly Anthony! ha) reapplied our sunscreen. Dad didn't end up so well- he was fried!

We all headed back and changed and showered and went to Scott's baseball game. He didn't play, but it was fun to sit out in the cool air (with our sweatshirts) and watch some baseball. We hung out that night and laid low, but it was so fun visiting with Michelle and Scott.

Friday we got up and went to breakfast outside at Martha's. It was so good and SUCH a great feeling to sit in the cool air with sun on our backs! Then we went to the AVP tourney which was in FULL swing! There were people everywhere and Anthony loved all the hooplah (sp?) surrounding it! There were tents set up all over giving out free things, and others selling stuff. We both made a stop at the $5 sunglass place- it's awesome! And then Anthony was so impressed with the Power Balance that we bought the place out! We watched some volleyball from the VIP tent (thanks Al!) and then met Anthony's great aunt, Thelma, and her husband Lou, for lunch in Manhattan Beach. They have lived there for 40 years after Thelma left her little Iowa town and are enjoying every minute of it! We absolutely adore Thelma and were SOOOO glad we got to see her! We came back and watched some more vball (sitting VERY close to Misty May- she's still recovering from her Achilles surgery after Dancing With the Stars). We got to see Kerri Walsh play and even saw her precious three month old son. BTW- Kerry was in her teeny bikini and had the flattest stomach- definitely did NOT look like someone who had a newborn! Ugh...

That night we all met up and went to a yummy Italian place for dinner. We got to sit back in the wine cellar- so fun!

Saturday morning Mom and Dad left so we took them to the airport then walked around Manhattan Beach for a little while. That and Hermosa Beach are the cutest little towns! They feel like small towns, but more urban of course, and they are so clean and fresh. Not to mention the weather is perfect and the houses are unreal! If only it was in Texas.... Anyway, we loved walking out on the pier and looking at the cute shops and houses. After that we went into LA! We walked up and down Rodeo Drive window shopping. We did walk into the Louis store only to be depressed that we couldn't even afford the LV handkerchief! We headed over to Beverly Blvd. to get a snack (Pinkberry of course!) and as we were sitting outside saw Dr. Burke from Grey's Anatomy (Isaiah Washington if you will!). Ant saw him and we weren't sure if it was him, so Michelle kind of "followed" him down to Subway where he went in with his PRECIOUS little girl for lunch. We "strolled" down that way and I sent Anthony in to Subway to "see if they had Dr. Pepper." He came out (Dr. Pepper-less.. I was so bummed!) and we sat outside waiting for Dr. Burke to come out. He did and we all saw him and confirmed it was him! How fun! hahahaha

After our little stalking experience, we headed to Hollywood's Walk of Fame and saw everyone's stars! It was neat, but crowded! We saw Michael Jackson's and I HAD to get a picture of it... It was packed and there was stuff all over it! I mean really people?! It makes me sad to see how much people are grieving his loss after leading such a strange life, but don't get me started.... We left and stopped at the BEST place for food- In N Out!!!!! DELICIOUS!

We then headed to one of my favorite parts of the whole trip- Robertson Blvd.! We walked up and down the street to all the BEST stores ever! This is a street I could live on- Rock & Republic, Seven, Kitson, Paper, Denim, and Cloth, AG, etc... I just loved it! We then sat and had some drinks and appetizers at The Ivy! Unfortunately there were no celeb spottings, but it was fun all the same! What they say about The Ivy is true- expensive and not very good... but it was DEFINITELY worth it!

We headed home and took naps- what a fun day! We went out to dinner on the Hermosa Pier that night at a yummy Mediterranean Tapas place (my fave!) and went to a little corner bar to sit and hang out on our last night. We sat outside and definitely needed the heaters!

We flew out the next morning at 7:25 and were sooo sad to leave! We had a great time visiting Michelle and seeing her little life. We always have the best time traveling with The Fam, too! The volleyball was great, company was excellent, weather perfect- what more could you ask for?! We were both definitely sad to come home...

Yummy and Easy!

So I have the most delicious (and healthy AND easy!) recipe to share... I got it out of the most recent Cooking Light and it lived up to what I thought it might be!

Tilapia Tostadas with Corn Relish

8 corn tortillas
1/2 C low fat sour cream
1/4 C green salsa
1 C corn
1/4 C finely chopped red bell pepper
1/4 C finely chopped red onion
1/4 tsp pepper
1/3 C yellow cornmeal
1/2 bag of broccoli coleslaw (or anything else crunchy- lettuce would work!)
1 1/2 tsp minced jalapeno
3/4 tsp salt
1 C peeled diced avocado
2 tsp lime juice
1 1/2 lbs tilapia cut into 1x1 inch pieces
1 Tbsp canola oil

Combine sour cream and salsa and set aside. Heat skillet and coat with cooking spray. Add corn, bell pepper, onion, and jalapeno and saute about minutes stirring occasionally. While cooking, combine avocado and lime juice in a bowl and set aside. Remove corn mixture from heat and combine with avocado mixture. Toss. Sprinkle fish with salt and pepper. Dredge fish in cornmeal. Heat canola oil in pan. Add fish and cook about 3 minutes on each side (med-high heat). Flip and continue cooking. While fish is frying, coat each side of tortillas with cooking oil. Broil each side about 2 minutes until crisp. Remove fish from pan and drain on paper towels.

Arrange tostada, coleslaw, fish pieces, corn relish and top off with salsa mix. Enjoy!

Baby Davis!

So last Monday, July 27th, sweet Baby Davis Warriner Thompson was born! He was about 7 1/2 lbs and 19 inches long. He was perfectly healthy and Christina had a great labor and delivery! We have been waiting anxiously for TEN months for this little rascal, and I finally got to see him this past weekend!

Saturday, Courtney and I drove out to San Antonio for the night to see him and celebrate Tina's birthday. Cara met us in San Antonio and it was such a good little getaway! When we walked in we just immediately fell in love! He is the sweetest little boy and Tina looked great!

Tina is an AMAZING mother already and Forrest is the greatest dad! I seriously think he needs to give lessons to men! He waited on Tina and took Davis to change him- so sweet! So we hung out at the Thompsons for a bit just ooh-ing and ahh-ing over Davis, and then went to check into our hotel and give the family a rest. BTW- the hotel we are staying at was the official headquarters for the Dallas Cowboys Training Camp! Not only did we have the players and coaches staying there, there were a TON of crazy fans! Not being a Cowboys fan, it was a little hard to swallow, but I made it through! :)

We went for a stroll on the Riverwalk (I love San Antonio!) but it was super hot, so we headed back to the hotel for a nap.

We went to dinner at the same place we had brunch for Lindsie's bachelorette party, Paloma Blanca, which is sooooo good! It's in Alamo Heights and so close to Tina's! We thought Tina might be able to meet us, but as it is having a baby- Davis wasn't ready to eat any time soon, so we ate then headed over after dinner!

Once again they were pros and Davis was precious!

It was so refreshing to spend some time with the girls and to see sweet Davis. I'm always in such awe at the wonder of God and His works. Davis is a little angel that only God could create. I can't wait to see what is in store for this sweet boy!
